About HUB 51

If it seems like HUB 51 is a continual party, that’s just what creators R.J. and Jerrod Melman want. Their dad, Lettuce founder Rich Melman, always told them that the restaurant business should be fun, and, as Jerrod now interprets that advice, “We want to be as playful as possible, and have a good time with our customers and the people we work with.”

“Our goal for the menu was to create food we like to eat,” says R.J. They loaded it up with sushi, tacos, sandwiches and burgers. Great salads and appetizers like the arugula Caesar and Pulled Chicken Nachos appeal to the bar crowd, while the filet mignon steak tacos and the charred sake salmon serve notice that HUB 51 is providing both a great time and wonderful food.

With dozens of beers, wines and sakes, HUB 51 is all about what you like. SUB 51, a private lounge below the restaurant, becomes an exclusive nightclub on weekends, while space in the main restaurant is also available for private parties and semi-private events.

R.J. Melman is managing partner of HUB 51, adjoining nightclub SUB 51, Paris Club Bistro & Bar, Chicago’s premiere nightclub Studio Paris, RPM Italian, Bub City, Three Dots and a Dash and Ramen-san – all located in Chicago’s River North neighborhood in addition to M Street Kitchen and Stella Barra in Santa Monica, CA, West Hollywood, CA and Chicago, IL, and Summer House Santa Monica in Chicago’s Lincoln Park neighborhood.

With an interest in restaurants dating back to his teenage years, R.J. began bussing tables and running food at age 13 at the former Bub City in Chicago. By high school, he was cooking at various Lettuce Entertain You Enterprises (LEYE) restaurants where he further developed his understanding and passion for the restaurant business.

In 2001, R.J. received his degree from the University of Kansas with a Bachelor of Arts in Political Science and Communication Studies. In the past decade, he has played many roles within LEYE including the general manager of LEYE’s iconic first restaurant, R.J. Grunts. He has also served as a consultant to a variety of restaurant projects outside of the company.

R.J., along with his siblings have opened more than 13 concepts within LEYE, their first being HUB 51 and lower-level club SUB 51 in June 2008. Since then, he and his partners have added several restaurants and nightclubs to their resume in Chicago and Los Angeles including a classic French bistro, Paris Club Bistro & Bar and adjoining nightclub, Studio Paris, modern Italian restaurant RPM Italian which they opened with celebrity partners Giuliana and Bill Rancic, Bub City, a BBQ joint with live country music and a tiki lounge, Three Dots and a Dash.

In addition to restaurateur, R.J. also spearheads the music programs at their two nightclubs Sub 51 and Studio Paris, which play host to some of the biggest names in music from Calvin Harris and Deadmau5 to Ellie Goulding. In 2013, the partners of Bub City began Windy City Smokeout, the Midwest’s premiere summer BBQ festival which brings together the best in live country music and BBQ.

R.J. and his partners have several upcoming projects in the works including an expansion of the RPM brand with RPM Steak, a modern steakhouse set to open in River North in summer 2014.

Residing in Chicago, R.J. is active within the Chicago philanthropic and business community and serves on a number of boards and committees.

Jerrod’s earliest memories of working in restaurants began at the age of 10 as a busboy at the original Maggiano’s. During high school and college, he held various roles in more than a dozen of the Lettuce Entertain You Enterprises (LEYE) restaurants, as well as In-N-Out Burger in Arizona.

The summer before his senior year in college, he participated in the LEYE internship program which solidified his interest in pursuing a restaurant career. After graduating from DePaul University with a bachelor’s degree in communications, Jerrod managed LEYE restaurants Osteria Via Stato and R.J. Grunts. He also gained valuable experience working with renowned hospitality groups in New York including BR Guest Hospitality and Union Square Hospitality Group.

In June 2008, along with his siblings, he opened HUB 51 and lower-level club SUB 51, offering Chicago’s River North neighborhood a unique mixture of dining, nightlife and entertainment. Since then, he and his partners have added several restaurants and nightclubs to their resume in Chicago and Los Angeles including a classic French bistro, Paris Club Bistro & Bar and adjoining nightclub, Studio Paris, modern Italian restaurant RPM Italian which they opened with celebrity partners Giuliana and Bill Rancic, Bub City, a BBQ joint with live country music and a tiki lounge, Three Dots and a Dash. To date, he has opened 13 concepts within LEYE, most recently a lively, neighborhood ramen shop, Ramen-san that opened in Spring 2014.

In addition to restaurateur, Jerrod and his partners at Bub City teamed up to introduce Windy City Smokeout in July 2013, the Midwest’s premiere summer BBQ festival which brings together the best in live country music and BBQ.

Jerrod and his partners have several upcoming projects in the works including an expansion of the RPM brand with RPM Steak, a modern steakhouse set to open in River North in summer 2014.

A longtime Chicago resident, Jerrod is an avid supporter of several local philanthropic and community initiatives. He also enjoys playing basketball and softball, going to the movies, and a night out with good friends.
